Halfway fill an 8X11 baking pan with COOKED spaghetti squash (this is usually about 1/2 of a cooked medium sized squash).
Mix together:
2 eggs
15 ounces low fat or fat-free ricotta
1/4 C parmesan
1/4 tsp salt (or to taste)
1/4 tsp pepper
1 tsp Pizza seasoning (
Durkee makes this and you can also buy it at
King Arthur's. This is NOT spaghetti seasoning or Italian seasoning - it's a different flavor and delicious!)
Spread this mixture over the spaghetti squash. Cook until bubbly and cooked through.
Mix together a jar of Ragu or WalMart brand pizza sauce (not spaghetti sauce) and another teaspoon of Pizza seasoning. The Walmart Brand is actually lower carb and tastes wonderful.
You can also add cooked low fat sausage crumbles, or leave it as is.
Pour this over the cooked squash and ricotta.
Top with parmesan cheese.
Cook until heated through.
