Default Sugar Free Holiday Nog

Sugar Free Holiday Nog

1 package (1 oz) sugar free instant vanilla pudding mix
7 cups fat-free milk, divided
2 to 4 packets sugar substitute
1 to 2 teaspoons vanilla extract or rum extract
1 cup fat-free evaporated milk

Combine the pudding mix, 2 cups of milk, the sugar substitute, and vanilla in a bowl. Mix according to pudding directions. Pour the mixture into a half-gallon container with a tight fitting lid. Add 3 cups of milk and shake well. Add the evaporated milk and shake. Add the remaining milk and shake. Chill. Makes 8 1 cup servings

Each serving:
107 calories; 15 grams of carbs; 10 grams of protein

hehehe...well its only called "nog" Dave, not "egg nog"....so its egg nog without the eggs.

I have no idea what this would taste like but hey, I figured it was worth posting and maybe trying. I'm sure it won't even come close to the real stuff but I'm game to give it a try.

I made a variation of this recipe today and it was excellent. Not as thick as the real stuff but it tasted mighty darned close!! I warmed it up and put in a little sugar free whipped topping. OOOOHHHH MYYYYYYYY.....I thought I had died and gone right off to heaven!

LINDA'S EGGLESS EGG NOG

One 1-ounce pgk sf instant vanilla pudding powder
1 cup fat free half & half
5 cups low fat milk
3 tablespoons Splenda granular
1 1/2 teaspoon nutmeg
1/4 teaspoon cinnamon
2 teaspoon brandy or rum extract
1 teaspoon vanilla extract

In large bowl whisk together pudding powder and half & half until dissolved. Whisk in until smooth milk, Splenda, nutmeg, cinnamon, brandy extract, and vanilla. Pour into a large pitcher and allow to chill for at least 2 hours. If mixture becomes too thick add a 1/4 cup milk at a time and stir to blend. This is thick, but not overly so.

Nutritional Stats per 1/2 c serving:

Per Serving: 70 Cal; 4 g Protein; .5 g Tot Fat

Oh, Beth, you are an angel. I've been walking past the egg nog in the grocery store....and feeling so deprived. I'm going to the store in the morning to get the ingredients. I've never heard of fat free half and half. How do you make FF cream? Hmm....

*L* I have no idea, Deb. I've wondered the same thing. All I know is that it is there and it is fat free....and this stuff is delicious!! I was missing my eggnog too. So glad I stumbled on this recipe.
