Pumpkin Chiffon Pie
Ok this is a treat for all of you who can tolerate sugar. This is my mother's pumpkin pie and it is to die for. Every year we would all of us kids ask her to make it and bring it to who ever had it at their house that year!
One Frozen Pie Crust - cooked as directed
1-envelope unflavored gelatin
1/2 cup of sugar
1/2 tsp salt,
cinnamon,
allspice,
ginger,
nutmeg
3/4 cup milk
2 slightly beaten egg yolks
1 cup pumpkin
2 egg whites
1/4 cup sugar
1/2 cup whipping cream (whipped)
Combine the first seven ingredients, stir in milk, egg yolks, pumpkin.
Cook over medium heat (stirring constantly) until gelatin dissolves.
remove from heat and cool in fridge until cool (partially set) then
Beat egg whites and gradually add sugar and beat till stiff. whip cream and fold into egg whites, and then fold all this with the chilled ingredients and add to pie.
