Default Italian Chicken Rollups

Italian Chicken Rollups

4 (4 oz. Each) Skinless, Boneless Chicken Breasts
1 teaspoon Dried Basil
1/4 teaspoon Pepper
1/4 teaspoons Salt
4 2% Mozzarella Cheese Sticks
1 Cup Spaghetti Sauce
Butter Flavored Non-stick Cooking Spray

Preheat oven to 350 degrees. Spray an 11x17 inch baking dish with non-stick cooking spray. Place each chicken breast between 2 slices of plastic wrap. Using a meat mallet or rolling pin, pound to 1/4 inch thickness. Combine the basil, salt and pepper; sprinkle half of the mixture on each side of the chicken, set the remaining seasoning aside. Place 1 string cheese stick across the center of each flattened chicken breast. Roll up chicken jelly roll style, starting with the short end. Place the chicken seam side down into the prepared dish. Sprinkle the chicken with the remaining half of the seasoning and coat with cooking spray. Pour the spaghetti sauce evenly over the chicken rollups. Bake uncovered for 35 minutes or until the chicken is done. Note: If you want to make these up ahead of time (like if you have guests coming over later for dinner), cover them and refrigerate for up to 8 hours after rolling them up. Then you can pour the sauce on and bake.

Serves: 4
Per Serving: 283 Calories; 12g Fat (37.5% calories from fat); 33g Protein; 11g Carbohydrate; 2g Dietary Fiber; 84mg Cholesterol; 712mg Sodium. Exchanges: 0 Grain(Starch); 4 1/2 Lean Meat; 2 Vegetable; 1 Fat; 0 Other Carbohydrates. WWP: 6 (www.AimeesAdventures.com)

These sound yummy! By the mozzerella cheese sticks, are they talking about the string cheese? I'll definitely have to make these!

Got to tell you Beth - this is superb!

Since surgery, I've had a problem with chicken cause it tends to be a little dry but not this recipe.

I've played around using different cheeses - they've all be outstanding.

Corrine, I'm so glad you tried it and liked it! Yes, I'm sure really any type of cheese would work with this recipe, whatever your heart desires. I was thinking doing a pepper jack and then use salsa instead of the spaghetti sauce and mexican seasonings verses Italian. Different recipe but same idea.

Well I made this tonight and it was really good! It's something I know I will be making again. Next time I think I may roll some fresh basil up in the middle with the cheese and maybe put some mushrooms in with the sauce and sprinkle either some shredded mozzarella or Parmesan on top of the whole thing.

Cheese - any cheese is great in the middle. My husband had some chopped bacon added to his cheese too....snifff!

Absolute must is mushroom and garlic. I just buzzed some up in my mini food chopper and spread that on the chicken. My favourite so far.

Ohhhh....that's a great idea to chop up the mushrooms and garlic and spread it on the chicken!! I like that better than putting it in with the sauce. Thanks for the idea, Corrine.
