Default Mexican Baked Spaghetti

Mexican Baked Spaghetti

1 Lb. 96% Lean Ground Beef
One Packet Taco Seasoning
1 (15 oz.) Can Tomato Sauce
1 (16 oz.) Can Fat Free Refried Beans
1 (15 oz.) Can Delmonte Zesty Chili Style Tomatoes
1 (15 oz.) Can Diced Tomatoes with Green Chilies, drained
1 (4 oz.) Can Diced Green Chilies, drained
2 Tablespoons Splenda Granular
1 Cup Salsa (mild, medium or hot)
1 (1 lb.) Box Barilla Plus Whole Grain Spaghetti


Preheat oven to 350 degrees. In a large pot, brown the ground beef. Once the meat is browned, add the remaining ingredients in the order listed (except the spaghetti). Stir to combine and cook until hot. Set aside. Cook the spaghetti according to package directions, drain. Spray a 9 x 13 inch pan with nonstick cooking spray. Place 1 cup of sauce into the pan and coat the bottom evenly. Place half of the spaghetti in the pan and distribute evenly. Place 4 cups of sauce over the spaghetti and spread evenly. Add the remaining spaghetti and top with the remaining 4 cups of sauce. Bake uncovered for 20 to 30 minutes or until hot throughout.

Serves: 12
Per Serving: 269 Calories; 3g Fat (10.8% calories from fat); 18g Protein; 42g Carbohydrate; 6g Dietary Fiber; 22mg Cholesterol; 883mg Sodium. Exchanges: 0 Grain(Starch); 1 Vegetable; 0 Fat; 0 Other Carbohydrates. WWP: 5 (www.AimeesAdventures.com)

I made this last night and it was delicious! Was a total hit with the family too. I don't do a lot of pasta but this sure hit the spot for me. So next time I have a pasta craving I'll most certainly be making this one again!

I just printed the recipe for the Mexican Spaghetti. It sounds delish.

You are doing great to be down to 157 already! Isn't it refreshing to fret about wanting to lose 7 lbs instead of 207? I know the smaller amounts of weight are harder to lose, but still.....I'll take 7 any day!

I am totally confident that you will be right where you want to be in January. You are a steel-strong woman, resolved to do this. We are all pulling for you. The exercise piece is hard, and your job is grueling, physically and mentally. Maybe there are some exercises you can do with an elastic band that will build muscles without having to drag ass for an aerobic workout. They would build muscle, raise your metabolism, and save things like your back and legs, since you are on them so much at work.

Keep going, Grrl! You are an inspiration to us and we are all rooting for you to make your goal. Even if you go right back to 155 the next day, just proving your strength of character to the PA will give you the ego boost all of us can use. I believe in you!

Oh thank you Donna....thank you so much! Yea, these last few pounds have been a bugger to get rid of but like you said, I would rather fret about 7 pounds than 207 ANY day!! It still boggles my mind when I think that I have lost over 200 pounds.

I'll get there...I HAVE to...gotta show Todd (PA) what this lady is made of! I know he will appreciate it. He actually is a wonderful man and very supportive. I really appreciate him and how he treats his patients. When I had my 6 month check up I was down something like 170 lbs. Before he even entered the room I heard him yelling outside the door..."Wow, WOW, WOW!!!" He had picked up my chart and looked at my weight loss. *L* I really needed that about then. I was so down in the dumps because I was in the middle of that scare with needing a breast biopsy. You know once he got in the door he picked up right away that I was upset about something. He hopped up on the examining table next to me and wanted to know what was going on. If he wasn't a married man I would have given him the biggest hug. *L* So anyway....he is a gem...and I have every intention of showing him what this lady is made of.
