Default Zuppa Tuscana Soup

Zuppa Tuscana Soup

Low fat kielbasa 24 ounces
Cauliflower, raw 2 medium heads, chopped
White potato, raw, 2 medium, chopped
Kale, cooked, from fresh, 1 cup
Onions, mature, raw 1.5 cups, chopped
half and half 16 oz
veggie broth 32 oz
water 1.5 quarts
3 tsps Chili powder
1 head of garlic sautéed in PAM olive oil spray
Sea Salt and pepper to taste

Add water, broth, kielbasa, potatoes, cauliflower and onions to a large pot.
Bring to boil til potatoes, cauliflower and onions are soft

Add half and half, allow to come to boil.
Turn heat down to simmer for a bit
A few minutes before finished, add fresh kale destemmed and roughly chopped.

12 servings

Calories: 242
Fat: 11 grams
Carbs: 17
Protein: 21

I bet this would work well in a slow cooker. Just add the half and half and the kale towards the end. To decrease the fat you could try the fat free half and half.

This sounds awesome! I'm going to make it this weekend. The Zuppa Tuscana is my favorite soup at Olive Garden...Maybe I will used Spicey Italian Turkey Sausage instead of the Kielbasa.

I made it last night with the spicey turkey Italian sausage and it was sooooo good! Thanks for another awesome recipe!

So glad you liked it, Kristi! I actually think I would prefer the turkey sausage too. The Zuppa Tuscana is also my favorite soup at Olive Garden but I have stayed away from it because of the high fat. This recipe solves that for me.

it's my favorite soup there too... in fact I just had a few sips/spoonfuls this past saturday night with my husband... I'll definatly use this in my new crockpot that he's buying me for Christmas... yeah I peaked!
