Easy Chicken Salad...
I'm sure others have posted chicken salad recipes before, but I just made some that turned out pretty good and thought I'd share:
Ingredients:
1 5 oz can white chicken
1 Tablespoon Reduced Fat Mayo
1 Tablespoon Dill Relish
1 large boiled egg
I mashed the egg and chicken together, added the mayo and relish, and I was done!
The whole recipe makes about 6 oz, I divided it into two portions and had it with about 8 regular sized (the small ones) wheat thins. (It took me about 1/2 hour to eat even the half portion.)
Per 3 oz portion:
108 Calories
4.5g Fat
150mg Cholesterol
533mg Sodium
1g Carbs
16g Protein (WooHoo!)

PS. You could substitute turkey or tuna in the recipe and still get a great salad.

Mike... cut up a couple of grapes and chop a few walnuts to stir in... will change it up a little for you!

That sounds great - I'll give it a try.
Be careful of the nuts and fruit early out though. I asked and was told to ask again at 12 weeks out

I really haven't graduated much beyond the meats. I knew walnuts would be awhile. I had some broccoli the other night and was scared after I ate it, but it seemed to go through okay. I've had virtually no fruits or veggies, with the exception of whatever might be mixed into prepared yogurts and a bite or two of baby food. I don't have room for veggies! (Oh, except I made room for mashed potatoes early on...the flaked kind that you make in the microwave. I made them soupy and they were SOOO good!)

Katie - surgeons and nutritionalists seem to differ on when we can start introducing things like fresh veg/fruit etc. I'm following my instructions to the letter so I don't get into trouble.
Talking of which - I'm now cleared for cereal and toasted bread.
Today I had half a slice of toasted wholegrain bread. I spread a Laughing Cow Lite cheese triangle on it. Honestly, you'd have thought I was sitting down to a banquet. I had been missing that crunch factor badly.

Corrine... I'm still pre-op, what do I know? LOL! Yes, follow doctor's orders... Puh-LEEZE!
I love the little Laughing Cow bits... and their commercials are hilarious! (Even if they live in Calif and I'm in Wisconsin - America's Dairyland!)

I was raised on those cheese triangles although back home in the UK, they're called "Dairylea" - yum!
Talking of cheese. Mike - try adding some grated cheese to your salad.
Even an ounce of that tasteless Kraft fat free grated cheddar would work and that'll add another 9g.
That would boost your protein up to just over 20g per portion. Anything to not have to have those protein drinks.......

I know others are talking smack about that FF cheese, but I LOVE it...it tastes like a light American cheese to me. I'm also enjoying lowfat string cheese AND they sell it cheaply at ALDI now, so I'm not having to pay the big bucks for it! I'll add some cheese to the salad tomorrow, I still have another portion to eat!
