Default Pumpkin Sloppy Joes

I thought this sounded interesting. I haven't tried it but I just think I might. I would probably eat this bunless or like an open-faced sandwich with the cheese melted on top.

Pumpkin Sloppy Joes

yield
8 servings.

ingredients

1 pound ground beef
1/2 cup chopped onion
1 garlic clove, minced
1 cup canned pumpkin
1 can (8 ounces) tomato sauce
2 tablespoons brown sugar (I would use brown sugar substitute)
2 tablespoons prepared mustard
2 teaspoons chili powder
1/2 teaspoon salt
8 hamburger buns, split
American cheese slices

directions
In a large skillet or saucepan, brown ground beef. Drain fat. Add onion and garlic; cook until tender. Stir in the pumpkin, tomato sauce, brown sugar, mustard, chili powder and salt. Bring to a boil. Reduce heat and simmer for 10 minutes. Meanwhile, if desired, cut cheese slices into shapes (triangles, half-circles, etc.) to make pumpkin faces. Spoon meat mixture onto buns; top with cheese shapes. Broil just until cheese melts. Serve immediately with bun top off to side.

Nutrition Facts: 1 serving (1 cup) equals 250 calories, 8 g fat (3 g saturated fat), 28 mg cholesterol, 607 mg sodium, 30 g carbohydrate, 3 g fiber, 15 g protein.

I wish my husband had a sense of adventure when it comes to food!!! I'd love to try some of these out.... and I may just have to anyway... he can have PB&J!

I know, Jen...but everyone was doubtful about my cottage cheese pancakes and they were sure a hit around here!

Default Surprise Surprise Surprise!!!

I just made the for supper tonight, and drum roll please. It is actually pretty damn good. Not exactly Manwich, but close enough. I have been wanting sloppy joes but the can stuff has so much added sugar. Now I can have that sloppy joe without the bun of course. I will definitely make it again. I even fed it to the fam and everyone loved it kids included. I didn't even tell them it had pumpkin in it or they all would have curled their noses and not even tried it. Guinea pig approved!!!!!

This sounds interesting. I think I'll try making it, especially since it has "guinea pig" approval now.

Years ago, I had a sloppy joe recipe that used chinese cabbage, fresh mushrooms, dry tomato soup, etc. It was SO good, and low calorie because of all of the fresh veggies mixed in with the meat. I'm going to have to try to find that recipe again and make it.

Sherry when you find that recipe please post it that sounds super tasty. Seriously it was good. I can not lie!!
