Crock Pot Minestrone
This is a family favorite....I sometimes omit the zucchini and add a drained can of green beans. I also use the ready minced garlic to save time. The night before I chop the veggies and store them in the fridge. Also cook the rice. In the early morning before work all I have to do is open cans and toss everything in the Crock Pot. The smell is heavenly when I get home from work! Enjoy!
1 medium onion, chopped
2 medium carrots, thinly sliced
2 stalks celery, cut into 1/2" pieces
1 red bell pepper, seeded, cut into 1/2" pieces
1 medium zucchini, scrubbed, sliced into 1/2" rounds
2 cloves garlic, minced
2 14 1/2 ounce cans low-sodium beef broth
1 28-ounce can crushed tomatoes
1 15 1/2 ounce can red kidney beans, drained
2 teaspoons dried marjoram
1/4 teaspoon coarsely ground black pepper
1 1/2 cups cooked rice
Add all ingredients, except rice to 5 quart Crock Pot. Stir to combine. Cover, cook on low 8 to 10 hours. (High: 4 to 5 hours) Before serving add cooked rice and stir to combine. 6 to 8 servings.
