Try grilling the eggplant...for baba ghanoush
Part of the secret to making really good baba ghanoush is in the roasting...iv'e grilled the eggplant outside by poking holes it them and grilling them over an open flame for about 30 minutes turning them every few minutes. After they have cooled try scraping close to the skin to get the smoky flavor. I have also added cumin and some liquid smoke when nneded to the traditional ingrediants...eggplant (of course), tahini, garlic, lemon juice and salt.
I even bought one of the little electric garlic roasters to roast garlic without having to heat up the big oven....for roasted garlic hummous.
