Default Thai-Style Ground Beef

Thai-Style Ground Beef
From Fiona Haynes

INGREDIENTS:
1 medium onion, finely chopped (about 1 cup)
2 cloves garlic, minced (1 tsp)
1 tbsp minced ginger
3/4 pound extra-lean ground beef
1 tbsp Thai red curry paste
1 14.5 ounce can crushed tomatoes
2 tsp brown sugar substitute
1 tbsp fish sauce or reduced-sodium soy sauce
1/2 cup lite canned coconut milk

PREPARATION:
Coat a large skillet with nonstick cooking spray. Saute onions, garlic and ginger on medium heat, until softened—about 3-4 minutes. Crumble ground beef and cook until no longer pink. Drain beef. Add red curry paste, canned tomatoes, sugar, fish sauce (or soy), and coconut milk.
Simmer for 10-15 minutes.
Serves 4-6

Per Serving: Calories 202, Calories from Fat 57, Total Fat 6.3g (sat 3.6g), Cholesterol 52mg, Sodium 617mg, Carbohydrate 15.4g, Fiber 2.7g, Protein 20.8g
