Shades of Brown Rice Salad
Servings: 6
Ingredients:
Salad
2 cups chicken breasts, cooked and cut into bite-sized pieces
2 1/3 cups boiling water
1 1/2 teaspoons ginger
1 teaspoon salt
1 cup brown rice
1/2 cup celery, sliced thin
1/2 cup dates, chopped
1/2 cup walnuts, coarsely chopped
1/2 teaspoon orange zest, or more to taste
2 oranges, cut
Dressing
1/2 cup light or non-fat sour cream
1/2 cup reduced fat or non-fat mayonnaise
1 tablespoon lemon juice
2 teaspoons Splenda
Preparation:
Add ginger, salt, and rice to boiling water. Cover and simmer until water is absorbed and rice is tender. While rice is cooking prepare the rest of the ingredients in a large bowl. Mix the dressing ingredients. Let rice cool to just warm before adding to bowl. Toss with dressing. Serve on lettuce leaves.
In place of the dates, you may use dried cranberries or cherries.
