Turkey and Sweet Potato Stew
Ingredients:
2 pounds cooked turkey breast, cut into 1" pieces
1 tablespoon Extra Virgin Olive Oil
2 cloves of garlic
2 teaspoons ginger
2 teaspoons coriander
salt and pepper, to taste
1 large yellow onion, coarsely chopped
2 jalapeno peppers, seeded and finely chopped
1 (14 ounce) can diced tomatoes, drained
1 large sweet potato, cut into 1" cubes
1/3 cup peanut butter (smooth)
1 (14.5 ounce) can chicken broth (reduced sodium works nicely)
Preparation:
Toss turkey with minced garlic, ginger, coriander and salt and pepper. Heat oil in a medium-large size pot over medium heat. Add onions and jalapeno to pot and cook until onions are translucent. Add turkey to pot, stir and heat for 2-3 minutes until heated. Add tomatoes and sweet potato and stir until combined. Heat for approximately 2 minutes. Add peanut butter and chicken broth to pot and bring to a boil. Reduce heat, cover and simmer for 25-30 minutes, or until sweet potatoes are tender. Serve hot.
