Spaghetti Squash
I'm not sure of the nutritional stats for this one but it sure sounds good to me.
1 2 1/2-3 pound Spaghetti Squash
1 pound lean turkey ground
1/2 cup chopped onions
1 clove garlic minced
1/2 tsp corn starch
1 8oz can tomato sauce
2/3 cup tomato juice
1 can 7oz kernel mexican corn drained
2 tsp chili powder
1/2 tsp dried oregano
1/2 cup Shredded Monterey Jack
Halve the squash lengthwise and remove seeds.
Place, cut side down on a baking sheet. Bake in 350 oven for 45min. Use a fork to shredd and separate squash into strands.
Meanwhile for sauce in a large skillet cook turkey, onion, and garlic till meat is no longer pink and onion is tender. Drain off fat.
Stir in cornstarch. Stir in tomato sauce and juice, corn, chili powder, and oregano. Cook and stir until slightly thick. Cook and stir 2 additional mins.
To serve, spoon meat sauce over squash and top with cheese.
Makes 4 regular servings.

Spaghetti Squash is so good for people with GBS. It is such a good substitute for the "real thing"
I usually serve it with Puttanesca sauce and it is so good. It is also very easy to bake the squash while I am preparing the sauce. YUMMY!
I'm a cook that just kind of throws it all in the pan, but here is my easy and tasty puttanesca sauce recipe.
sauté lots of garlic in several T of olive oil
add about 1 c of sliced or chopped kalamata olives
(some people put anchovies in there too, but not me - I'm against putting hairy fish in pasta...)
throw in 1 c of chopped basil
add a big can of peeled tomatoes, or if you're really adventurous, chop your own - I'd use Roma
(you can also add a small can of tomato paste but i always forget to buy it)
turn heat down and simmer for as long as you want.
turn off the heat and throw in 1 c of roasted pine nuts
serve with 1 c of chopped basil on top and grated Parmesan over spaghetti squash.
I usually put a grilled chicken breast on top

No, I haven't made this but now that I've read it again I really think I should.  I've used spaghetti squash for other "pasta" type dishes and really like it. Actually I like it better than pasta and so does my pouch.
If you make this let me know how it tastes. Please?

well, you'd have to go out to eat with the rest of them...I burned the sauce. I guess since I was using turkey, there wasnt any fat in the sauce and it stuck and burned. The burner was only on medium...
I just put it all down the disposal. Well, except for the squash, I just turned the oven off and walked out of the room.

awwww, sorry sweetie  ...and I bet you were so looking forward to trying this. yeah, the turkey burns pretty easy. It doesn't take much. I've cooked with the extra lean ground turkey and really have to keep an eye on it. I've burned it too in the past.
Maybe just use the squah with some low sugar spaghetti sauce with a little mozzerella cheese thrown on top. I've done that before and it is pretty good.
