Cabbage and Jicama Cole Slaw
Cabbage and Jicama Cole Slaw
2 cups shredded green cabbage
1 cup shredded red cabbage
1 cup julienne jicama*
½ sweet yellow pepper, cored, seeded and cut into matchstick size pieces
1 large carrot, coarsely grated
¼ cup chopped fresh basil leaves
¼ cup chopped fresh mint
Coarse salt and freshly ground pepper
3 Tablespoons fat-free mayonnaise
1 Tablespoon rice wine vinegar
2 teaspoons sesame oil
In a large bowl combine the cabbages, jicama, yellow pepper and carrot. Add the basil and mint and sprinkle with salt and pepper to taste.
In a small bowl combine the mayo, vinegar and oil. Pour this over the cabbage mixture and toss to coat. Cover and refrigerate at least 1 hour before serving. Toss again just before serving. Makes 8 servings. 35 calories per serving.
*Jicama tastes a little like an apple and is available in most stores. If you can’t find it, substitute an apple.

LOL thanks for the information on what Jicama was.. I was like.. cabbage and WHAT?  I'm happy with cabbage, mayo, shredded carrots, onion, pepper, and a pinch of splenda..

All of these recipes sound scrumptious, but what I am wondering is, how are you able to even fit any of this in after you have consumed the protein you need? I just don't have the room to put anything unless it's protein. I struggle to get it in as it is. I would have to eat something like this as a snack and then would be shorting myself on protein that way. Do you guys just eat larger quantities than I do? I can do about 1/2 to 3/4 cup if it's beans or something soft. Salad is the ONLY exception to this and I put meat in my salads. If it's something solid like beef roast, I can only eat 1/2 max!

I am able to fit in salads when I eat fish or shrimp which is high protein and low on bulk side.~m.

I can usually get in about 3 oz of meat along with 1/2 cup salad. But I am also 18 mos post-op so getting in my protein is much easier. I don't always eat a salad but once in awhile its a nice change.

trina... try keeping it in the frig and taking a bite... just a bite. I get in so much food this way... I'm up to almost 1200 cals per day. I eat constantly but one bite seems to work for me. I know it's agaisnt the rules but seriously... I need to gain weight! try just one bite and go back after 15 minutes or so.

I'm a rebel Jen... I drink all day!
I can't drink for the first 30 mintues after I have a "meal" but the rest of the time I sip like crazy! I try to wait a few mintues after a bite..... I'm getting at least 70oz a day right now. I've done the dehydrated thing and it sucks way to much to do it again.....
I'm breaking a lot of rules right now but I need to gain weight.... or at least stop losing! I only lost 1 pound last week so that was good.
