Easy Slow Cooker Thai Peanut Chicken
Thought I would post some recipes using one of my new loves. It is called PB2. It sounds strange but I swear it is the most fantastic tasting peanut butter!! And when you look at the nutritional stats you will fall in love for sure.
Easy Slow Cooker Thai Peanut Chicken
INGREDIENTS
2 lbs Skinless, Boneless, Chicken Breast
3/4 cup Salsa
1/4 cup PB2 http://www.bellplantation.com/mm5/me...oduct_Code=PB2
1 tsp Ginger (if fresh, minced)
2 Tbsp Soy Souce
2 tsp Lime Juice
2 tsp Cornstartch (Optional)
2 tsp Minced Garlic (Optional)
INSTRUCTIONS
Combine all this in a crockpot and cook on low for 6 - 8 hours.

I don't think you will be sorry that you bought it, Dyann. When you compare the nutritional facts to regular or even reduced fat peanut butter, you just can't beat it.

It was great. I would put in more salsa and no cornstarch. Much of the liquid evaporated and left a yummy thick sauce where the flavors were more pronounced then when I first mixed them. I have a problem with chicken breast. It wasn't as soft as a thigh but still moist enough I could eat it at this stage. 6 months ago...forget it. Very tasty!!!

Thanks for letting me know. I'm going to have to try it myself! I do okay with chicken breasts but actually prefer thighs. I may have to try it with breasts and thighs to see which I prefer.

Just made this tonight and it was great! Even my three year old loved it. I adjusted the salsa like Dyann suggested (1 cup) and it came out perfect. I think this might be a weekly menu item for a while. It was the most I've eaten since my surgery. Thanks!

1 year later: 162 lbs. 
I have a normal BMI!!!!

It sounds like I need to make this one for sure!  So glad you liked it. I have a Greek chicken on here someplace that is fantastic! You may like to try that one too.
