Crock Pot Bean Cassoulet
Crock Pot Bean Cassoulet
6 Boneless, skinless chicken thighs
8 oz smoked turkey sausage, sliced
1 large carrot, cut in coins ( about 1 cup)
1 Onion, Diced
3 Cloves garlic, minced
1 cup tomato sauce
1/2 cup chicken broth
1/4 cup red wine
1 teaspoon thyme
1/4 teaspoon ground allspice
1 15 oz can butter beans, drained
1 15 oz can black beans, drained
Brown the chicken in 1T of olive oil and then put it in the crock pot. Brown the onions, garlic, and carrots in the same skillet, spread over chicken. Sprinkled with thyme and allspice. Mix tomato sauce, wine, and chicken broth together and pour over chicken. Cook on high for 1 hour and low for 4 hours.
Add sausage and beans, cook on low for another 3-4 hours.
