Default Tomato Cucumber Salad

Tomato Cucumber Salad
From Fiona Haynes

I don't know about all of you but I have found myself craving fresh vegetables and fruit like you wouldn't believe!! I almost would rather skip the protein and just eat fruit and vegetables but I know that isn't what I should be doing. If you are like me I would suggest throwing in some tuna and mozzerella with this to give you your needed protein. This would probably taste good with chunks of chicken or little shrimp too. Go ahead and play with it I'm sure you can find a way to "protein" it up.

INGREDIENTS:
4 roma or vine ripe tomatoes
1 medium cucumber
2 tbsp balsamic vinegar
1 tsp extra-virgin olive oil
1/4 tsp sugar
2 tsp chopped fresh basil
Freshly ground black pepper to taste

PREPARATION:
Slice tomatoes and cucumber thinly and place in a medium bowl. Combine vinegar, oil and sugar. Drizzle over sliced tomatoes and cucumber. Toss, then sprinkle with chopped basil. Refrigerate or serve at room temperature.
Serves 4

Per Serving: Calories 58, Calories from Fat 14, Total Fat 1.6g (sat 0.3g), Cholesterol 0mg, Sodium 12mg, Carbohydrate 9.4g, Fiber 1.9g, Protein 1.6g

MMMMMMMMMMMMM that is my favorite food I eat this salad from the deli all the time! Me and my youngest daughter sit at the table and eat this salad in bliss all the time...Thanks for sharing!

I make something like that too, but I use plain old extra virgin olive oil, white vinegar, lime juice, and salt and pepper instead of sugar.

When I want this salad to be a meal I cut chicken breast up on it, yum.

Or sometimes I add feta cheese and black olive slices to make it "greek".

Yesterday at work I mixed all of the above together and it was delish!

Feta and black olives sound good too, Anna. I made this to go with supper tonight and tossed some shredded mozzerella and some green peppers in it. Family loved it and devoured it!! Guess I won't be having any leftovers for lunch tomorrow.
