White Lasagna
White Lasagna
1 lb. ground turkey
1 onion
1 green bell pepper
1 red or yellow bell pepper
1 yellow squash
4 stalks celery
2-3 zucchini squash
6 eggs
8 oz. Fage yogurt
16 oz. LF Ricotta cheese
8 oz. Parmesan cheese
¼ c. dried parsley
1 tsp. minced garlic
1 tsp. Italian seasoning
16 oz. Alfredo sauce
Shredded Mozzarella cheese
Brown ground turkey. Drain. Dice onion, bell pepper, yellow squash and celery. Mix in one bowl. Slice zucchini into thin strips. Mix eggs, yogurt, Ricotta, parsley, garlic, Parmesan and seasonings.
In a 9 x 13 dish, layer ½ ground turkey, ½ diced vegetables, ½ egg/ cheese mix, zucchini strips, ½ Alfredo sauce and Mozzarella. Repeat.
Bake at 350 degrees for 1 hour. Allow to cool 15 min. before serving.
These are approx. stats. Depends on the type/brand of alfredo sauce you use, but I went with the kind in the refrigerator section...
10 servings - which would be average sized servings from a 9x13 pan. A WLS size serving would probably be half of that.
