Hot and Cold Curry Chicken Salad
1 1/2 cups Fage yogurt
3 tbsp. curry paste
2 tbsp. sf honey
Grated peel and juice of 1 lemon or 2 limes
1 minced garlic clove
1 2" piece of fresh ginger, peeled and grated
1 Rotisserie chicken, skin removed and meat shredded or chopped
1 mango, cut into cubes
1 red pepper, seeded and chopped
1 small red onion chopped
4 ribs celery, chopped
1/4 cup slivered almonds toasted
salt
pepper
Combine yogurt, curry paste, honey, lemon or lime peel and juice, garlic and ginger. Add chicken, mango, pepper, onion, celery and nuts to combine. Season as needed w/ salt and pepper.
