Another variation for cottage cheese pancakes
Ok....here is another take on the infamous cottage cheese pancake recipe.

1 egg
1/2 cup low fat cottage cheese
Splenda to taste
2 Tablespoons of flour
Now....here is the change............
Take 1/2 of a granny smith apple - peel, core, chop. Saute in 1 tsp of butter (I use the real stuff) until soft (not mushy). Fold into the pancake mixture. Add 1 - 2 tablespoons of shredded reduced fat cheddar cheese. Fold into the mixture. Cook on a heated griddle or fav pancake pan.
I lightly brushed them with a bit of melted butter. But, you could serve this was a small dollop of sour cream or maple syrup. Your preference.
I bet you could even add some chopped walnuts if you wanted too.
