Southwest Salad
Southwest Salad
(Entire salad: Approx. 275 calories, 4.5g fat, 800mg sodium, 35g carbs, 8g fiber, 13g sugars, 30g protein = 5 Points)
3 cups romaine lettuce + 1/2 cup tomatoes + 1/2 cup red pepper strips + 1/4 cup corn niblets + 1/4 cup black beans + 1/2 cup plain chunk-style chicken + 2 tbsp. salsa + 2 tbsp. balsamic vinegar
This salad will satisfy your craving for a giant honkin' Mexican-inspired meal. And feel free to zazzle it up a little more with some shredded fat-free cheese and/or some crushed baked tortilla chips. Your nutritionals will vary, of course, but this one's so low-cal that even with the extra goodies, it'll still clock in with staggeringly low stats.

Yummy! Salad! I'm such a salad addict now-a-days! I will definitely try this out soon, I always get McDonald's Southwestern Salad or whatever it's called but this is definitely a lot healthier.

Let me know if any of you try this. I think next time I shop I'll be picking up the ingredients. I'm in such a salad craze lately. I suspect this recipe will probably make up at least 2 meals for those of us who have had wls so I would probably cut it in half but add fat free cheese to up the protein for a half portion.

I'm adding the ingredients to my grocery list right now! It will be lunch for work on Wednesday. I'm home today with my bum knees Can't walk much, icing, elevating, resting. But plan to grocery shop tomorrow after work and make this for Wednesday's lunch - thanks for keeping the recipes coming my dear!

I did get the ingredients, but will now make it for Thursday. We are having a potluck at work that day. I will let you know what I think and what the masses say also!
It's sad to say, but the 'healthy' foods seem to go last. I remember choosing the brownies over the carrots and celery every time! There are two of us at work with the GBS. I am 7 months out and the other is 3 years out. We watch out for one another!

Hey, we're going to have to make some real plans here soon. July is just around the corner!! Only like what...3 weeks? woo hoo!! We're gonna have fun! The Douglas/Saugatuck area has some great little shops!
