Yummy Chicken burritos!
This is not a precise recipe. I just through it together, but it was soooo good.
I had a lot of chicken breasts, and was cooking for a big group.
5-6 large boneless, skinless chicken breasts
1 med. onion
1/2 bag frozen bell pepper mix strips
1 can stewed tomatoes
1 can chicken broth
1 can green enchilada sauce
tsp. ground cumin
salt
pepper
garlic
olive oil
dice and saute onion in olive oil
cut each breast into 3-4 pieces and season w/ salt, pepper, garlic and cumin
add a little more oil to pan and brown the chicken on all sides with the onions
add frozen bell pepper mix and stewed tomatoes, stir till peppers are heated
add chicken broth and green enchilada sauce
cover and simmer about 20 min. or untill chicken is done but still juicy!
Remove chicken and cut into smaller chunks, return to pan
very saucey, use a slotted spoon to put chicken into a tortilla or put in a shallow bowl w/ tortillas on the side!
This was so much I had to use 2 pans, but you could easily adjust the amounts.
I served it with refried beans
cheese
and homemade guacamole
