Better than mashed potatoes!

Introduction
I couldn't believe how good this turned out. Once you've tried it, you
won't even miss mashed potatoes.
Ingredients
1 cauliflower head (cut into florets and washed)

4oz of cream cheese (fat free)

1 cup of mozzarella and one cup of parmesan (low fat)

1/4 cup of heavy whipping cream (dont look at the fat count)

seasoning as you like. I like to use Mrs. Dash table blend and pepper.
Directions
Boil cauliflower florets until very tender. In a large bowl, mash boiled cauliflower with all other ingredients. Put into a food processor for a couple of minutes, or until smooth and then spoon mixture into a cassarole dish and top with plenty of parmesan. Bake at 350 for about half an hour to 40 minutes and enjoy!!!

That sounds sooo gooood. I am in phase 1 - clear liquids. next week is full liquids, and the next week is soft foods. I am so looking forward to soft foods. I had already decided to try to make some mashed cauliflower like mashed potatoes. This is even better. Thanks!

WOW, this literary made my mouth water! I eat plain cauliflower all of the time(I boil four florets until very tender and spray them with 0 cal/0 carb/fat free fake "butter" spray) and love it. I will be trying out this recipe very soon!
