Egg White Baked Manicotti
Ingredients
10 egg whites-separated (or however many you would like to make)
1 whole egg
ricotta
mozzarella (shredded)
grated parmesan
dried oregano and basil
low carb tomato sauce
pam cooking spray
salt and pepper
Directions
first, make the manicotti filling:
Mix together ricotta, parmesan, mozzarella, 1 egg, salt, pepper, oregano, and basil. (Make as much as you need)
next, cook each egg white in a pan sprayed with pam. Once you have all of the eggwhite circles ready, put a line of manicotti filling down the center, and roll into 10 individual cigar shapes. Spread a few tablespoons of the Low Carb tomato sauce in the bottom of a baking dish, and layer the egg manicotti on the dish. Cover with tomato sauce, mozzarella, and parmesan cheese.
Bake until golden and crispy!
