Default Lasagna Stuffing Casserole- No pasta! Soft!

I invented this last night, when I was making a big pot of sauce for my honey. I so wanted some, but I wanted it on something! Voila!

Preheat oven to 350 degrees; spray a small casserole or 10" pie plate with Pam.

1Tbs olive
10 oz fresh spinach-as dry as possible!

Put oil in saute/fry pan, heat on medium, add spinach. Cover as soon as you can get it to fit- spinach cooks down a lot!
When spinach has cooked down, remove to cutting board and chop- spread it out to cool a bit. Drain any excess liquid.

In a med. bowl, beat:

2 eggs
1 cup part-skim Ricotta
1/2 cup low fat cottage cheese
2 Tbs grated Parmesan cheese
1 tsp granulated garlic (or 1/2 tsp garlic powder- NOT garlic salt!)
Salt and pepper

Add spinach, mix together. Put in Pam'ed casserole. Sprinkle more Parm on top, if you like. Start checking after 30 minutes. It is done when it is brown on top and a knife inserted in the middle comes out clean.

Great as is, or serve with some spaghetti sauce. Leftovers microwave well.
