Default Warm Apple Compote

Suitable for those of us on soft/pureed diets- and anyone else who loves warm apples and cinnamon!

2 lb bag of apples (preferably firmer apples, such as Granny Smith or Cortland)

1/4 cup sugar (don't freak, it's for 2 lbs of apples! and it helps the apples release their juice)

1/2 cup water

1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice

1/4 cup Splenda, or to taste

Peel, core, slice apples. Put in a heavy-bottomed pot with all other ingredients. Bring to a simmer on medium heat, then reduce to low and keep at a low simmer for approx. 30 minutes. If you want it thickened a bit, add 1 tbs. Tapioca and simmer for 10 minutes after the addition.
Also good cold over a scoop of cottage cheese!
