Default SF/FF Pumpkin Pecan Cranberry Muffins

I was dying for something sweet tonight, so I experimented with a regular recipe to make it sugar- and fat-free. They turned out pretty good, so I thought I'd share.

PUMPKIN PECAN CRANBERRY MUFFINS

Preheat oven to 350 degrees; line muffin pan with paper muffin cups (makes about 16 muffins)

INGREDIENTS:
1/4 C. "Sunsweet Lighter Bake" fat-free butter/oil substitute
1 1/2 C. Splenda
1/2 C. egg substitute
1 tsp. vanilla
1 3/4 C. pureed pumpkin or pureed roasted butternut squash
2 C. all-purpose wheat flour (I used King Arthur's White Wheat flour)
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. cinnamon*
1/2 tsp. nutmeg*
1/2 tsp. allspice*
1/4 tsp. ginger*
1 C. chopped pecans
1/2 C. dried cranberries
*can use more to taste if desired

In a mixing bowl, mix "Lighter Bake" with Splenda. Add egg substitute and vanilla, mix well. In a separate bowl, combine all dry ingredients together. Place chopped pecans and dried cranberries in a small bowl, toss with 1 Tbsp. flour mixture to coat; set aside. Add flour mixture and pumpkin puree alternately to sugar/egg mixture 1/3 at a time, mixing after each addition. When all ingredients are combined, mix in cranberries/pecans. (Be careful not to over-work batter or muffins will be tough.) Drop batter by spoonful into muffin cups, filling each cup approx. 3/4 full. Bake @ 350 degrees approx. 20-25 minutes, or until toothpick inserted into center of muffin comes out clean.

EDIT: I just calculated the nutritional value per muffin; they aren't fat-FREE (because of the nuts, but they are a "good" fat), and there is a small amount of sugar, but overall, still not too bad... Someone with a Weightwatchers calculator pegged them at 2 points per muffin.
