Splenda Lo-Carb Peanut Butter Cookies
Easiest recipe I've ever made... and they taste good, too!
1 cup reduced-fat, crunchy peanut butter
1 cup Splenda (the kind you measure)
1 large egg
1 tablespoon of warm water.
Mix together, roll into balls about the size of a walnut, drop on a cookie sheet and press down with a fork. Bake at 350 degrees for 9 minutes. I also added a teaspoon of vanilla to mine, and they turned out fine.
Makes about 20 cookies, each with around 2 grams of sugar (according to what peanut butter brand you use - I used Peter Pan), and about 4 grams of protein.

Yeah, I had to try 'em before I believed it. They're a little heavier than traditional peanut butter cookies, and there is a bit of aftertaste to the Splenda.
Also, wait until they cool to eat them (if you can). The Splenda aftertaste is much stronger while they're hot.

could you add some dry milk powder,a flavor free protein supplement or even that new flavor free fiber stuff to this recipe to make it better for you?

The dry milk powder would probably be fine, but both the protein stuff and the fiber might be adversely affected by the heat. However, nothing ventured, nothing gained, so why don't you try it! Then come back and let us know how it turns out...

Sounds great!
I was wondering if you could add wheat germ or flax or something, but I bet you would end up with a cookie you could kill a critter with if you threw it...

So I tried a variation of these last night. I omitted the water, used Egg Beaters instead of a regular egg and I used regular Skippy Creamy Peanut Butter 'cause it's what I had in the cabinet. I got 14 (2"X2")cookies out of my recipe. When I broke down the ingredients I used here are the stats:
serving size 1 (2"x2") cookie:
118 calories
4.5 g protein
9 g fat
4 carbs
1 fiber
94 sodium
2 sugar
I checked skippy's website for their reduced-fat pb. Had I used that it would have reduced the calories to 90 & the fat grams to 7.

I made these yesterday...according to Lisa's directions. I was hankering for a cookie and thought I'd give it a go.
It freakin' worked...I couldn't believe it! They tasted like homemade peanut butter cookies from when I was little AND they were sugar free! Unfortunately, they were not fat free or calorie free.
While I discovered that this does indeed make a great cookie, it also creates an incredibly powerful trigger.
One serving turned into two and by the end of the day, I had eaten 4 of the cookies. Thank goodness the wife, the baby, and the in laws ate the rest of them or I'd be eating another one right now.
Unless it's for a special occasion, I don't believe I'll be making these again just to have around the house...they're too tempting...but BOY were they GOOD!
