Default Tex-Mex skillet

TEX-MEX SKILLET

1 pound of lean ground beef, pork, turkey or chicken
2 cloves of garlic, minced
1 12ounce can of kernel corn, drained(personally, I was forbidden to eat corn so if you were too then leave this ingredient out)
1 16ounce can of black beans
1 12ounce jar of salsa
1/2 cup of water
2 tsp. taco seasoning sauce
1/2 cup of shredded cheddar cheese
6 6-inch wheat tortillas or tortilla chips(if you've been extra good...as a treat!)
1 small plum tomato, chopped
2 lettuce leaves, shredded
scallions, diced(to taste)
1 cup low fat sour cream

In a large skillet cook meat and garlic over medium-high heat until meat is slightly browned. Drain any fat. Stir in remaining ingredient except the cheese and tortillas. Bring to a boil and lower heat. Cover and simmer for 10 minutes. Uncover and top with cheese. Cook until cheese is melted - about 2 minutes. Serve hot with tortilla chips or roll in a wheat tortilla. Top with chopped tomatoes, shredded lettuce, low-fat sour cream and scallions. Serves 6-8.


Another newspaper Super Bowl special. If I'm not mistaken there's something similar to this already here?? I'm sorry if it's exactly the same but it sounded really good to me so I decided to post it for anyone that'd like to try it! Enjoy!
