ENCHILADAS A LA EASY
1 lg. onion, chopped
1 clove garlic, finely chopped
1 lb. ground beef
1 tbsp. flour
1 can tomatoes, do not drain but dice tomatoes
1 tsp. salt
1/4 tsp. pepper
1 sm. bag of corn chips
1 lb. grated cheddar cheese
Shredded lettuce
Diced, fresh tomatoes
Saute onion and garlic in skillet, add meat and brown. Stir in flour until absorbed; add can of tomatoes and juice and seasonings. Simmer for 30 minutes, covered.
Put corn chips, cheese, lettuce, and tomatoes all in separate serving dishes. Put skillet on table to serve meat hot. Order of layering on individual plates at the table: Meat mixture Cheese Lettuce Tomato
NOTE: Salsa, guacamole and/or sour cream may be put on top.
this way you can leave off the corn chips and just have the good stuff, but the corn chips are a treat for anyone else not counting carbs and all that...kids love this
