Easy Enchilada Casserole
EASY ENCHILADA CASSEROLE
2 lb. ground beef or turkey
1 can tomato sauce
1 c. salsa
1 pkt. Taco seasoning
1 c. corn - thawed
1/2 tsp. red pepper
2 c. grated Cheddar cheese
1 can refried beans
4 med. soft flour tortillas
In skillet, brown and drain ground beef or turkey. In same skillet with meat, add: tomato sauce, salsa, taco seasoning, corn, and pepper. Mix and let simmer. In round 2 quart covered round casserole dish (Corningware) begin to layer:
Flour tortilla
Heaping tablespoon refried beans (spread)
Meat mixture (as above)
Grated cheese
Continue layering until out of above mixture. (Does approximately 3-4 layers) Make sure top with cheese.
Cover and bake at 350 degrees for 20 minutes or until cheese bubbles. Serve with sour cream and tortilla chips! Yummy and very easy!
Makes great leftovers!
