Default Strawberry Ricotta Whip

This light, frothy recipe is tangy, creamy and full of fresh fruit flavor

2 1/2 cups fresh starwberries, quartered
1/2 cup fat-free ricotta cheese
1/2 cup plain, fat-free yogurt
1/2 teaspoon grated orange zest
1/2 teaspoon vanilla extract
4 packets artificial sweetener
6 tablespoons egg white substitute
1/2 teaspoon cream of tartar

1. combine strawberries, ricotta, yogurt, orange zest, vanilla, and sweetener in the container of a food processor and process until smooth

2. in a medium bowl, whip egg white substitute and cream of tartar until stiff peaks form

3. gently fold beaten egg whites into strawberry mixture. Pour into 4 small dessert bowls and chill overnight

Makes 4 servings

Guidlelines according to the Eating Well After Weight Loss Surgery book:
For lap-band/bypass/BPD-DS: Weeks 1+: serve 2 ounces as is

calories 86 protein 9 fat 0.38g carbs 14g cholesterol 3.83mg fiber 2.4g sodium 85.27mg

lol, that is funny - i am a major cook, always cooking/baking and all that

Leah (daisy) gave me that Eating Well after weight loss surgery cookbook, so i thought i would post a few every day when i get time

it is great for newbies, would start them out with good smoothie recipes and puree recipes that protein powder or skim milk powder could be added to
