Coconut Chicken Curry
This is an awesome crockpot recipe! A very Americanized version of the Thai favorite, Gang Garee Gai (yellow chicken curry), but soooooo good!
1 tablespoon vegetable oil
4 boneless skinless chicken breast halves
3 medium potatoes, peeled and chopped
1 medium onion, sliced
1 (14 ounce) can coconut milk
1/2 teaspoon salt, plus more to taste
1/2 teaspoon black pepper
1 -2 cloves fresh garlic, or garlic powder to taste
1 1/2 teaspoons curry powder (or to taste)
1 cup chicken broth
1 (10 ounce) package frozen peas, thawed
2-3 tablespoons toasted flaked coconut (optional)
Heat oil in a medium frying pan. Add chicken breasts and brown on both sides. Place potatoes and onion in crockpot. Place chicken breasts on top. Combine coconut milk, salt, pepper, curry powder and chicken broth in a bowl and stir thoroughly. Add to crockpot. Cover and cook on low 7 to 8 hours. One half hour before serving, add peas on top of chicken mixture. Just before serving, stir mixture thoroughly and sprinkle with toasted coconut if using. Serve over rice or Asian noodles, if desired.
My notes:
1.) The coconut milk seems SO strong when you open the can and smell its yumminess, but it really does cook away to almost nothing. The other flavors (spices, chicken broth, chicken, onions) pretty much mask it. Make sure you use "full strength" coconut milk, not light. I am going to try adding more next time.
2.) The cooking time is WAY long, and I got started a little later than I would have like. I cooked it for 4 hours on low, and then kicked it up to High for the last hour or so. Everything was done, but the potatoes were just a tad firmer than I'd have liked.
3.) It DEFINITELY needs a bit more salt. It was slightly bland when I first tried some, so taste it and add salt to your taste.
4.) We ate it over Basmati rice and had some garlic naan (Indian bread) from Trader Joe's, which rocks my world. Good for soaking up all the curry sauce.
5.) Real Gang Garee Gai uses actual Thai yellow curry paste, has fish paste and often has carrots in it. I recommend looking it up on the Internet or finding your local Thai restaurant and trying it out. You'll be hooked.
Completely delicious, really nice. Good flavors all around, and fun to make.
