Sugarfree Caramel Apple Cheesecake
I made this today for DH's Birthday. It was really rich but SO GOOD! It was a hit with the entire family. I only ate a really small slice but it was plenty. Really curbed any sweet craving I had.
Sugarfree Caramel Apple Cheesecake
1 (20 ounce) can no sugar added apple pie filling
1 (9-inch) lowfat graham cracker crust
2 (8 ounce) packages light cream cheese
½ cup splenda
¼ teaspoon vanilla extract
2 large eggs
¼ cup sugar free caramel topping
1 ½ tablespoons chopped pecans
Preheat oven to 350 degrees.
Reserve ¾ cup pie filling – set aside. Spoon remaining filling in bottom of pie crust.
Beat cream cheese, splenda and vanilla until smooth. Add eggs and mix well.
Pour over pie filling.
Bake for 30-35 minutes until center is set.
Cool to room temperature.
Mix the reserved pie filling with caramel topping in small saucepan and heat for 1 minute or until spreadable. Spoon mixture over top of cheesecake and spread evenly. Top with chopped pecans.
Refrigerate until ready to serve.

What do you mean by "pie filling"? Is there an unflavored one out there or something? (Can you tell I don't cook?!  )

You're welcome Bridget! I'm just really enjoying recipe hunting and trying to figure out ways to make some of my favorite foods and my family's favorites in a much healthier way! In a way its making cooking fun again for me.

I made this a couple days ago for my birthday, so I could have something to eat and put candles in. It was sooooo damn good. Im still sneaking tiny little slices. The family liked it too. Well done. Double thumbs up.

So glad you enjoyed, Bat. I must say this is one of my favorites! I don't make it too often because it really is far from low calorie but for those special occasions it's the pie I would pick for myself to make.
