Default Cottage Cheese-Oatmeal Pancakes (variation from other recipe)

Linda's Cottage Cheese-Oatmeal Pancakes
Susan Maria's Before & After Help (Powered by Invision Power Board)

1 c. oatmeal, ground (measure BEFORE grinding in a food processor)
1/2 t. baking soda
1/8 t. salt
3-4 T. Splenda Granular
1/4 t. pumpkin pie spice (or combination of other sweet spices you like)

Stir together above ingredients in a mixing bowl. In a seperate bowl whisk together:

4 eggs
1 c. cottage cheese
1/3 c. milk
1 t. vanilla

Add to dry ingredients and let sit for a few minutes. Spray a small skillet with
non-stick spray. Heat over medium. Pour 1/3 c. into hot pan and cook until cake
is getting dry on the top (but lower heat if it gets too dark on bottom). Turn
carefully and continue to cook for a few minutes. (These are difficult to flip
if you don't let them cook enough on the first side.) Can cool and stack on a plate
and wrap tightly with plastic wrap.

These are sooooo good with plain yogurt and a squirt of sugar-free syrup. Or peanut
butter and syrup, or jam and cool whip.........the possibilites are endless!

Approx stats: 6 pancakes - 10 pro grams/each - 152 calories/each

(I cut this recipe in half and got 3 pancakes. I only was able to eat 1. I would think you
could reheat them in plastic wrap, if you cooled them and wrapped them in plastic wrap. I
didn't try. My daughter ate the other 3 and really liked them. I thought they kind of tasted
like french toast.)

Okay, I finally tried these and they were good!! They tasted quite a bit different from the other kind. I would say they kind of had the taste of French Toast, to me, minus the bread. I put a bit of sugar free preserves on mine. I cut the recipe in half and ate one pancake and feed the other 2 to my daughter who liked them too.

So if you are looking for a french toast kind of taste, I would try this! *G*

I kind of liked using the oatmeal instead of the flour for this one. I may try oatmeal in the other one and see if it works as well as the flour.

Beth, I did try these and they were fantastic. I mixed the oatmeal in the food processor (I used two weight control pkg, banana bread, cause they have more protein, and made up the difference with reg oatmeal, @ 1/4 cup) then I added the cheese and eggs right in the processor and worked great! I didn't add the splenda or seasonings because the oatmeal had that in it. I got 5 large pancakes and ate one with a little peanutbutter and sugar free syrup, I plan on freezing some to try it. My counts were a little different than yours, I got 65protein and 888cal for the whole batch divided by 5 = 13p and 178c.

Glad you liked them, Ann. Great idea about using the protein oatmeal. hmmm...I could maybe use the quaker weight control oatmeal which would up the protein too. Thanks for the idea.

I made these today and they were great! I had one and will keep the rest for another time. My mom and hubby both liked them as well. I did add an additional scoop of my unflavored protein powder to get more protein into them and will definitely be making them again. I added spray butter and a small amount of sugar free syrup.

I just today received the newest book by Susan Maria with my order from bariatric eating.com.... can't wait to get into it. Nothing like reading recipes when you're into your pre-op liquids!

Several of you were looking for this recipe so thought I would bump it up.

When I've made these in the past I have used the Quaker Weight Control oatmeal. It has more protein in it than regular instant oatmeal so it will bump up your protein.
