Default Cottage Cheese Pancakes

I made these this morning and they were SO GOOD and really fast and simple to make. I ate 2 of the 4 and was very satisfied. I gave the other 2 to one of my daughters who absolutely loved them!! Definitely a recipe that is worth trying. I like it so much I will probably make it for breakfast again tomorrow!

Cottage Cheese Pancakes
Susan Maria's Before & After Help (Powered by Invision Power Board)

Half a medium onion, chopped
1 tablespoon butter (I actually don't use any butter. I just saute with PAM and some butter spray instead)
1 egg (I use egg substitute instead)
1/2 cup low fat cottage cheese
2 tablespoons flour
salt
pepper

Saute the onion in the butter until golden... allow to cool in pan. In a small bowl, beat egg slightly, blend in cottage cheese, flour, salt and pepper, and onion butter mixture.

Heat nonstick skillet, spray with Pam, and place four 1/4 cup scoops of batter and spread into small pancakes. Cook until browned... flip and cook until lightly brown on other side.

Beth, I did try these this morning and they were wonderful, nice variation from the old egg thing! I was a little scared about the onions in it for breakfast but wow it was great! Thanks so much for the recipe. Oh I got 3 pancakes and ate one and the count was about 10 protein per pancake.

I'm glad you liked it, Ann. I've made them a couple more times and enjoyed them each time. It's just a nice variation from my same old breakfast. I was getting tired of smoothies.

I just made these this morning. I ate 1/2 and they were so yummy. I think I would actually like them with out the onions. The best part is you could put just about anything in them... Thanks a bunch...

So those of you that tried them, did you like cottage cheese before. I can't down cottage cheese unless its hidden in something. Also, what did you put on these if anything.
