Even making them, I am thinking...yuck.....BUT OMG - they are good. They remind me of an omelette a little......and yes the daughter ate them too. I could see adding some cheese ontop to change it up a bit, but I loved them just plain.
NEVER IN A MILLION YEARS would I have seen this recipe and tried it.
Beth I printed out a few others of yours from here to try too!
THANKS

Oh, Lisa, I'm so glad you tried them! You never would guess there was cottage cheese in there, would you? I still need to try the other cottage cheese-oatmeal pancakes. Those are sweet ones but still sound good.

I was just gonna print them on regular paper. Can't do anything fancy. I was also going to make it email compatible for anyone who would like to print it. I don't have very many yet, but I will keep adding them as I get them.

Storing these little beauties! Both variations
Okay guys, if you are like me I could only do like 2 of these pancakes and only 1 of the other variation. I did find out that they can be frozen. Here is the info:
"you can cook them all, then let them cool and put each one in something like a sandwich bag. Then put the whole stack in a freezer bag and freeze. Then when you want one, take it out of the freezer and nuke for 30 seconds. Check, and if it needs more time, nuke some more."
Works for me!

Sounds like some people need cooking lessons...lol!
NEVER, NEVER would I have thought to eat cottage cheese pancakes... but now I eat them all the time. I add in cheddar cheese to them sometimes, sometimes a little feta....Cottage cheese on its own does not pass these lips!
