Default Corn Dip

This is the spicy corn dip that I brought to the Christmas party on 12/16/04.


Corn Dip

2 cans of Mexicorn (drained) (I think they are the 15 oz. size)
1 can of choped jalapenos (DO NOT drain)
1/2 cup of sour cream
1/2 cup of mayonaise
1 whole bunch of green onions (chopped)
1 bag of shredded Mexican cheese (the 2 cup bag)

Mix all of the ingredients the night before you want to eat. If it is not hot enough the next day, add another can of the jalapenos. Serve with tortilla chips.

Thumbs up Mmmm!

I just wanted to post that I tried this dip at the Christmas party at Dr. C's & P's and it was delicious! It had the perfect amount of just about everything. The spiciness was perfect. Try it! You'll like it!

Default I have a question

Hi Dale,

Ok, so when can you start having this dip. Kelly said I was not supposed to have corn, rice, or soft gooey bread for another few weeks. Is the corn in the dip ok to eat?

Anyway the dip sounds great!

Davey,

You have to wait to eat corn. I think after 6 weeks...or maybe longer...maybe it was 3 months. I know Kelly told me I couldn't eat corn for a long time. Once you are able to eat corn, this dip is awesome if you like something with a little kick.

You are doing a great job! Keep it up.
