Greek Chicken
I made this tonight and it was SO YUMMY!! Even the family raved about it. I would highly recommend it. It made up fairly fast with minimal work involved.
Greek Chicken
Susan Maria's Before & After Help (Powered by Invision Power Board)
2 teaspoons extra virgin Olive oil
Boneless skinless chicken thighs, about 2 pounds, cut into 2 inch pieces
1 large Onion, diced
3 cloves Garlic, minced
salt and black pepper
1/4 teaspoon cinnamon
1/2 teaspoon dried oregano
Big can of diced tomatoes in puree, fire roasted Progresso or Muir Glen are great!
1 cup white wine or chicken broth ( I used Swanson's chicken broth with garlic)
5 ounces low fat Feta cheese
1/2 cup black olives no pits Kalamata are the best. I bought a container of them from the deli counter
Italian parsley, chopped, about 1/4 cup
brown the chicken cubes in olive oil and remove to a bowl. Add the onion and garlic to the pan and saute until softened. Add back the chicken and any juices. Add tomatoes, wine, salt, pepper, oregano, and cinnamon, bring to a boil cover, reduce heat and simmer 30 minutes. Add feta and olives, cover and simmer an additional 15 minutes, or until chicken is very tender. Garnish with parsley.

Thanks Beth. I'm always looking for ways to prepare meat, I usually can't do meat unless it's real moist/tender. This sounds like it would be both moist and tender. Not sure when I'll have time to cook it, but it's in my future plans - again, thanks.
