Default Fat Free half and half!

YES it's TRUE!!! I have been buying it for about an year now. They actually have fat free half and half in the dairy section of most grocery stores. Just as good as the real stuff too!!! It isn't artificial or all chemicals either. Love it in my coffee in the morning. Just thought I would let everyone know.

Default Low Carb Eggnog

Low Carb Eggnog

Most of the ingredients in eggnog are already relatively low in carbohydrates, so coming up with a low carb eggnog should have been easy. Well, it wasn't! This recipe is the result of a lot of tinkering with ingredients and ratios to get a relatively low carb drink that tastes wonderful. Our testers decided it was good enough that even non-low carbers would enjoy it and not even know it was low carb. We used DaVinci flavored syrup and Splenda for our testing, but you could use your favorite syrup and artificial sweetener with good results as long as they are heat stable.

4 eggs, separated
1/3 cup plus 2 tablespoons Splenda, divided
Pinch salt
2 cups heavy cream
1 cup eggnog or rum sugar free syrup
1 cup water
1 teaspoon vanilla extract
2 teaspoons rum extract
Whipped cream (sweetened with Splenda)
Freshly ground nutmeg

Beat the egg yolks in a medium heavy saucepan. Add the 1/3 cup Splenda and salt and mix well. Stir in the cream, syrup, and water and mix well. Cook over medium heat, stirring constantly, until the mixture thickens and reaches 160 degrees. Remove from the heat and add the extracts. Cool to room temperature. Beat the egg whites with the remaining 2 tablespoons Splenda until soft peaks form. Fold the eggs whites into the egg yolk mixture and chill for at least three hours. Serve in cups with the whipped cream and nutmeg.

Makes 8 servings.

Preparation Time: 15 minutes
Cooking Time: 10 minutes Chilling Time: 3 hours
Total Time: 3 hours, 25 minutes

Sugar Free Eggnog

12 egg yolks
1 cup powdered Maltitol
2 cups Vanilla Sugarfree Syrup
1 cup Bourbon
2 cups heavy whipping cream
1 teaspoon vanilla extract
6 egg whites
1/2 teaspoon nutmeg

Makes 16 Small Punch Cup Servings

In the top of a double boiler, heat vanilla syrup over boiling water then add Maltitol and whisk until smooth. Beat the egg yolks until lemony colored. Add 1/4 cup of the hot syrup slowly to the egg yolks, whisking continuously until the eggs are warmed. Then add the eggs slowly to the hot syrup, whisking until well blended. Heat this mixture until it coats a spoon. Add the nutmeg and remove from heat to cool. You can hasten this by placing the double boiler over a saucepan of cold water.

Whip the cream, adding the vanilla.

Beat the egg whites in another bowl until stiff.

Fold the whipped cream and egg whites together and then gently fold in the cooled egg yolk mixture. Add the bourbon. (Note: if you wish to omit the bourbon, add 2 tablespoons rum extract and 3/4 cup water.) Chill thoroughly before serving with a dollop of whipped cream and a pinch of nutmeg.

Total carbs: 16
Per Serving: 1 carb

Thanks a bunch Peck! If you happen to come across a good egg nog recipe that is made without any dairy (lactose intolerant) let me know. I love the stuff! I can have a little cheese, cream cheese, cottage cheese but no milk, yougurt or s/f ice cream. I'm not sure how I'd do with half and half or heavy cream. I guess I should just give it a try but boy do I get ill from the dairy!

1 - Lactose Free Eggnog

Tasty Options In Search For Nutritious Drinks(NAPSI) - Stirring up a lot of interest are some fun ways to drink to your health. People who can't tolerate milk but still want to boost their nutrition now have a tasty option made with a lactose-free milk alternative that is nutritious without the soy taste. This recipe for a creamy tasting drink is made with lactose-free Vitamite 100 non-dairy beverages. Vitamite 100 is rich in vitamins, low in sodium and is cholesterol-free.

Ingredients:

* 2 cups Vitamite 100
* 2 egg whites
* 2 teaspoons vanilla
* 1 teaspoon rum extract
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon ground cinnamon
* 1 tablespoon sugar
* 1/2 cup crushed ice
* Ground nutmeg for garnish

Directions:

Combine first 8 ingredients in blender and blend until smooth and frothy. Sprinkle with nutmeg and serve.

Serving Size: 2 to 4 servings

2 - Lactose Free Eggnog

Pre-preparation: Have a very large bowl with ice and water ready for the end of cooking time!

1 quart Lactaid 100 milk
6 eggs
dash salt
1/2 cup splenda
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
2 cups non-dairy whipped topping (Note)
more ground nutmeg for garnish
bourbon whiskey (optional)

Heat milk in large pan. Do not boil. Beat eggs and salt in bowl. Gradually add sugar to the eggs while beating well.

Gradually stir a quarter of the hot milk into eggs. Then gradually add eggs to the hot milk in pan, stirring constantly. Cook on medium heat, stirring constantly until mixture thickens (160 F). Add 1/4 teaspoon nutmeg and 1 teaspoon vanilla.

Remove pan from heat and rapidly cool in ice water bath to prevent over-cooking. Store in refrigerator.

Before serving, stir in whipped topping, and bourbon and top with dash of nutmeg.

Lactose Free Pumpkin Pie

Ingredients:

* 1 unbaked pie shell
* ¾ cup splenda (sugar)
* ½ tsp salt
* 1 tsp ground cinnamon
* ½ tsp ground ginger
* ¼ tsp ground cloves
* 2 eggs
* 1 15 oz. can pumpkin
* 1 ½ cups vanilla Edensoy (organic soy beverage)

Mix dry ingredients in bowl.

In another bowl, beat eggs lightly. Stir in pumpkin and dry ingredient mixture. Slowly pour in Edensoy and stir until blended.

Pour into pie shell and bake in a preheated 425º oven for 15 minutes.

Reduce temperature to 350º and bake for 40-50 minutes. Makes 8 servings.

Peckkale, thank you sooooooooooooooo much for posting these!!! I LOVE eggnog! Every year I would be at McDonalds getting a huge eggnog shake the second they had them made for the holidays Now I can have my holiday treat w/o the guilt
