Default Tomato, Mozzarella and Fresh Basil Wraps

Luna Lurker (Judy) sent me this recipe last night. I haven't tried it yet but it really sounds yummy and I couldn't believe the protein count!! So I thought I would pass it on.

Tomato, Mozzarella and Fresh Basil Wraps

Ingredients

1/2 cup non-fat, whipped cream cheese
2 tablespoons finely chopped, sweet onion or garlic
2 tablespoons freshly chopped basil leaves (about 10 leaves)
salt and pepper to taste
4 large flour tortillas
8 slices reduced-fat mozzarella cheese, thinly sliced
4 large lettuce leaves, shredded
8 large slices tomato, sliced thin

Preparation Cook: 15 minutes

In a small mixing bowl, combine the cream cheese and onions and basil. Add salt and pepper to taste.
Lay the tortillas out and spread 1 tablespoon of the cream cheese mixture on each of them. Divide the mozzarella among the tortillas and spread the remaining cream cheese mixture on top of the mozzarella. Place two slices of tomato on each wrap. Divide the shredded lettuce among the tortillas and tightly roll each tortilla into a cylinder, ending with the seam side down.
(The wraps can be stored in the refrigerator for up to 3 days.)
Cut the wraps in half on the diagonal and serve.

I agree Whitney. I may just go out tomorrow and get the ingredients. Tomatoes are really good here right now.

Okay, thought I would report back on how this was.

I actually found that I tolerated the wrap better than I expected. Last time I had tried one my pouch didn't like it. I really liked this and it was a good quick lunch but I would suggest people really read their labels. I'm not sure about the nutritional facts that came listed with this recipe. The ingredients I bought came up to 25 gms protein with the recipe as is and 10 grms of fat. I did end up adding some deli turkey with it that brought it up to 33 gms but without the turkey there was no way it was even close to 37gms. I guess the best thing is to figure it out yourself.

Still worth making again, though. I did like it!

Thanks for the recipe, Judy.
