Stuffed Dates
4-5 large dates, pitted
2 Tbsp light cream cheese or nondairy cream cheese substitute
1 Tbsp finely chopped walnuts
1 Tbsp dried cherries, minced
Mix dried cherries and walnuts with cream cheese. Slice date down center and stuff with mixture. Refrigerate about 10 minutes to set then serve.
