Default Delicious salmon

I bought some frozen salmon fillets at Costco and they are great. I know they have fresh, but that is farm raised salmon (YUCK) the frozen is wild salmon, vacuum packed in individual serving, marinated and seasoned. Here's how I prepared mine and it was great.

Cover the bottom of a pan with extra virgin olive oil.
When the oil is nice and hot, cook salmon untill not quite done. Try to turn only once so it doesn't break up. Place on a plate and cover (tent) with aluminum foil to alow it to rest and finish cooking. If you cook it all the way through in pan it will be over cooked.

Leave the used olive oil and salmon residue in pan. Add 1/4 cup low sodium chicken broth. A little minced garlic. A little lemon juice. 2 tablespoons of dijon mustard. Cook untill liquid reduces by half. Very good sauce.

Steam a little asperagus and you've got a delicious, and very healthy meal.

TROY!!!!! Gotta tell you, I hate Salmon but it sure is nice to see your face again!!! It has been a long time no see. Are you going to start back with support group? It's now at Bridget's place in El Cajon. Next meeting is this Wednesday. Hope things are going well with you.

Hi Pam.
I'm not going to make this meeting because of a business meeting i have to attend. It's hard to make these. I have so much going on that keeps me busy, including other types of meetings that I attend (AA, Church, etc). I will try to make it next month though. I sure would like to see all of you.

I get salmon filets from Costco as well. I give them a nice hand rub of spices, then layer fresh herbs and top with fresh lemon slices - covering the entire filet.

Then I place them in my smoker, and let them SLOWLY cook for the next 5 hours or so with apple wood. I've shared it with others, and said they've not tasted anything better. Why? Because of my expertise in smoking foods of course!

Oh yeah, I'm the best.

(Yes, I'm full of myself when it comes to my smokers!)

I really like salmon but the one time I've had it post-op it made me VERY ill. I'm pretty gun-shy about trying it again.

I also love salmon alot.

Here is how i do it. I use the same kind of frozen salmon as parrottroofing, just, i buy mine in sweden

Set the oven on 200 degrees Celsius (393F)
I usually just place the samlon pieces in a dish that i can have in the oven (in lack of english words i hope you get it )

Then i pour some sweet chilli sause over each fillet (it is and asian kind of sause) and some salt

Then i let the salmon fry in the oven for 45 minutes.

I usually serv my salmon with rice and fresh steamed broccolli. yummy!
