Spinach Quiche
This sounds nice and easy. I don't have the nutritional facts for this but I would think the protien would be pretty high.
Spinach Quiche
Ingredients
2 (10 oz.) pkg. frozen spinach
3 eggs or egg substitute ( I used 4 eggs)
6 oz. nonfat cottage or ricotta cheese
1/8 c. Parmesan cheese
(added 1/2 lb of cooked ham)
Spices and herbs as desired
Cooking Instructions
Preheat oven to 350 degrees. Spray or grease a 9-inch pie plate or pan. Thaw and drain spinach, beat in eggs, mix in cottage or ricotta cheese. Add Parmesan cheese. Bake 40-45 minutes until edges brown and center is firm. Serve hot or cold.
Makes 6 servings
Nutrition facts:
I figured these out myself. These are with the ham:
Calories: 125 cal
Fat: 5.5 grams
Protein: 16 grams

It almost sounds too simple, doesn't it? But I like all those foods, and you can't get much healthier than that. I hand wrote it out, and will copy it into my little homemade cook book. I wonder if you could make about 1/2 the amount and bake it in a smaller loaf pan or little muffin cup?

Marty, I bet you could cut the recipe in half. I don't know why not. The muffin cup idea sounds great. You could make up a few of them and just heat them up for a quick lunch or supper. I don't think it would freeze well but it should keep several days in the fridge.
I love really simple recipes too. I like to cook but it has to be simple!!

Okay guys, I finally made this one and it was pretty good. My daughter and hubby really liked it. I did make a few variations to the recipe. I added 1/2 lb cubed cooked ham, made it 4 eggs and added some minced dried onion, minced dried garlic and salt and pepper. It wasn't quite as cheesy as I wanted it so I think next time I will try the shredded parmesan instead of the grated.
Let me know if anyone else tries it!

Your tweaks sound great.....and you got in more protein. Do you think I could put in a little low fat cheddar and have it cook right?

Yes, I actually thought about putting in some low fat cheddar too. I think that would taste really good or some part-skim mozzarella would probably taste good too.
