Default great new taste for those on soft foods!

I have been trying different things since I am still on the soft foods stage. Well tonight I found a winner and wanted to share it with all of you.

Take a nice round zuccinni - (I had some fat half pints here that is what I call the sweet short ones.) Take a mellon baller or spoon and hollow out the center. Then take the center and chop into small pieces. I added a little protein powder, some fat free cream cheese, some motzorella and some cumin and chili powder for spice just a little. Then add in some oregano and basil. Fill the hollowed zuccini with the mixture. Leave a nice ball flowing out of the top. Bake in oven on 350 for 35 minutes and you have a doft sensation, new taste, and it is something you can serve as a side dish to the rest of the family. I can not wait till I get to eat the outside too. I am thinking by then I could stuff them with rocatta and mushrooms and maybe some tomato sauce for a lasgana flavor.

I am excited for this one.
