I just saw the thread I know how you feel I am also feeling the same way. I see the rommates come home with all this food and pizza, sandwihes, chilli fries ect and I get sad. I tried to explain but between the McDonalds being shoved in their mouth and the video games no one listens so here was my solution.
I cook. Yeah I know but what. Well I have a list of 1 of our favorite things I make and they are all healthier versions of things we already love so I have found if they expect dinner on the table when they get home from work they do not bring the junk in the house. Here are our favorites.
10) Shrimp and avocado pasta - Ok I can not have the pasta yet but making it in a healthy way means i have whole mal and something I can have too. Cook a little butterflied shrimp until just soft. In a skillet combine 2 teaspoons of heart healthy butter ( it has five calaries and tastes like movie theater butter so do not use to much cus it has a real butter flavor unlike some of the others) add 2 tbsp of fat free sour cream, juice of half a lemon, 1tbsp oregano, 1 tbsp of tyme, 1 tbsp of chili pepper in saute pan. This makes the sauce for your pasta and shrimp. Add back in the shrimp to reheat and absorb the sauce. remove 5 pieces for yourself. (medium to small shrimp) Veggie noodles from trader joes in boiling water for 3 mminutes. I get the basil or the preflavored noodles in veggi you can use real if you want. Since I will not be able to digest them for some time I thought I would get everyone else eating what I will be eating when better and healed. place pasta, avocado pieces and sauce with shrimp on a plate for guests or family and remove your shrimp and eat with 1/4 avocado. Tastes great and you still get to eat with the family.
9) Mashed cauliflower - If I am cooking chicken for them, I will also make it with smashed cauliflower for a side I can have. Boil cauliflower will very tender, strain and add a little heart healthy butter, add a little oregano, add a little parmissian cheese or feta cheese. You can add protien powder if you do not overdo it to get your protien in as well.
8) Bacon and eggs - There are so many things you can do with egg beaters it is amazing. I like to cook the bacon for the guys and then use the same pan to make my egg beaters it adds a lot of flavor. Very simple works well. Try morning start imitation bacon and put one slice in it for flavor. Sometimes I can keep it sometimes not.
7) Veggies - In case you do not know this about me I love veggies. I love color and I love flavor so I love zuccini dishes. You can make on for the whole family. take four zuccini, two green and two yellow. Peal two of them. (I peal them becuase I can not digest the rind my roommate and hunny love the rind so I cook some on some off. Now cook he zuccini without the rine once pealed in a saute pan with a little olive oil and some basil crushed on top. Add a clove of garlic and the juice of 1/4 onion. I can not eat a onion unless in soup or caserole so I put it in the garlic press and then use the juice so I can still get all the flavor. Cook until mashable abd remove from heat. Sprinkle with oregano and parmissian cheese. Not do the same thing with the unpeeled zuccini but add the seasonsing all to the pan and 1/4 chopped onion this is for everyone else. Cook up some rice (Hint: Henry's has a low carb rice and it is also small so it cooks well. Get it in the bins.) Now you can top rice with veggies and lots of flavor.
6) Canned chicken - if you can not handle the fresh try the canned. It is softer and easier on the system in my opinion and a good source of protien. Try to take 4 oz cream cheese, 2 oz cottage cheese, sme protien powder and some lemon juice mux together till warm. Add in some onion juice, oregano, and rosemarry or tyme. Add in one can chicken. Seperate into 4 ounce servings. IN the batch for the rest of the family, add a little onion shopped (alternately water chestnuts add crunch and are great in this as well), one roma tomato diced (juicing it first and saving the juice for a soup or something else) Add all seasonings and some motzerella cheese for a gooey suprise. Make it a family meal by stuffing filling in pastry dough by peperage farms ( crescent or pilsberry will work but they are higher in fat and calaries plus this is really flakey) Serve with green beans or other side. YOu can eat the filling you set our for yourself while the family gets a slightly different version and it is all very fast to make with tons of protien.
5) Roasted veggies - I love these. I make them every sunday so I have them for recipes through out the week. For those who have had intestinal surgery this is a great way to remove the skin and still get hte flavor and vitamines from the veggies. take some roma tomatoes, sead them and drain them but keep the insides for a soup or another recipe. Take the meet and cut into pieces. Do the same thing with bell peppers any color they all work will. Drizzle with Extra Virgine Olive Oil and then sprinkle crushed garlic, basil, and oregano on top. Cook in oven on 200 for 4-5 hours seperate into container for those pealed and those with skin so you do not mix them up. Turn it into a meal as well. Sunday is a pasta night for us since my hunny works. Cooking vegi pasta is fast for us but if you want use any brand your family will eat. to be honest my guys think it is the same thing I have never told and they have never asked if it was not fettachini. Take chunks of cheese I like fetta or gorgonzolla cus it is low fat, fresh, and creamy. Plus has 9 grams of protien. Since stronger cheeses go farther I consume less and use it in more things. in skillet cook olive oil, basil, and some of your roasted veggies. Add a little butter heart healthy is my favorite, some capers and one tsp of the juice from then. then add just a little sour cream to the mix at the end. Pour over pasta for family and eat just veggies and sauce for you. Also good if you add eggplant.
4) Quiche - Believe it or not you can still have quishe - Take 2 strips imitation bacon, brocoli floretts, chicken or soy sausage if you can get it, and one container egg beaters blend together in strainer add juice from one of your tomatoes you juiced above or a roma strain the seeds out. Add some cheese and more egg for consistencywith 1/4 cup milk. Repeat the proccess for the rest of the family without pureeing and just chopping everything. Used chopped veggies, tomatoes, cheese and onion. In pie pan payer fillo dough. It is lower in fat and calaries then normal dough and 5 sheets last forever but when you are allowed to eat again you will be able to have it so get the family used to it. pour mixture of chunky quiche and pureed version at same time so half suites you and half suites everyone else. Cook in overn at 350 for 40 minutes until set.
3) The romantic - Mushroom cups - Take a can of chicken, 2 ounces of fat free cream cheese, some fetta, juice of a lemon or caper juice works well, some canned new potatoes (better with water chestnuts if you can have them I can not) mix together. Seperate into seperate 2 oz servings and add Chopped red onion, chopped roasted pepers to mix, (pealed ones for your serving if you can not have rinds) mix in bowl. Take portabella mushrooms and cook with olive oil and basil in oven on 250 for 30 minutes till soft. Top mushrooms with mixture and back another 10 minutes till soft and gooey.
2)My version of tortilla soup - I can not have the carrots, celery or carrots in tortilla soup but I love it so here is my version I will give recipe with real chicken but if you are not doing well on it try canned it is softer. IN a small saucepan boil 2 cups chicken stock. Poach a chicken breast in the pot. You will know that is done or almost when you see the boiling broth is foamed on the top. remove chicken but keep sauce hot. Strain out the foam with a spoon. While that is boiling start your soup in a large soup pot add 1/4 onion, 2 cloves garlic, juice of a lemon, roasted pepers, and 4 - 6 oz mushrooms sliced. Cook till almost soft. add one can 6 oz of pealed chopped tomatoes. Add 1/2 cup of white wine it will cook out the liquor I promise. Mux till starts to thicken. Add chicken breast or canned chick and slowly pour and mix in the stock. I do not use a lot of salt and therefore I use organic broth with no sodium but you can use whichever you like. I then season the soup with oregano, basil, italian seasoning, pepper, chilli pepper, and cumin. Let cook for 20 minutes to incorperate all flaors and finish cooking the chicken as well as the seasonings. Serve with sides for the whole family. I found low card tortillas that were less fat and calaries then the chips so I slice them up into strips and cook 4 minutes on each side under hot broiler. Put out some cheese, avocado, and fat free sour cream.
1) The favorite - Sheppards Pie - I like this cus it is one pot I can eat out of that they love to eat out of. In a pan cook ground turkey and 1/4 chopped red onion. Season meat with tyme, oregano, basil, cumin, and rosemarry. Add a little chilli pepper not to much though just for flavor. about a tsp. IN seperate pot make the mashed potatoes (you can use instent if you like) mix potatoes with 2tbsp of unflavored protien powder, 1/4 cup milk, 2 tbsp heart healthy butter, and one egg yolk is optional (egg beaters work fine and add protien this is to make the top get golden when you bake it) Combine the cooked ground turkey with one can cream soup I like the broccoli Place mixture in pie pan, layer on french cut green beans then potatoes on top.. Traditionally, people will make this with carrots or with corn neither of which I can have so this is my version. Ground turkey will come first for me before most meets and it is healthy and lean. In addition even on soft foods I can eat the top and still get all the flavor even if I can not keep the meet down and they guys love the dish so they ate an entire one themselves the other night. LOL
MY FAVORITES
Juice - Since I can not have the sugar the ocean spray cranberry has only a small amount and only 5 calaries but unlike most of the juices that say light is not overly bitter since it is made with splenda
Snack - remember when you could snack on chips and dip while watching the game? Well you kind of can just not with chips. Try getting a whole artichoke an cut straight acrossed the top of it. Place in boiling water for 30 minutes till the leaves are nice and soft. while that cooks take 2 tbp of yogart plain flavored, some dill, some lemon juice, and just a pinch of chilli pepper it is great. So is making a dip out of 2 tbsp of fat free mayo and a little but if lemon juice with rosemarry and oregano. Once the artichoke is cooked. remove and peal petals. if you have never ate it this way and only had a can of artichoke hearts you will be suprised. The bottom of the leaves become buttery and you can scrape the soft parts against the back of your lower teeth to eat them. They go down well since they have a lot of flavor but are liquidy. Once you get to the button do not stop. Take out the hairy looking portion at the bottom and but into eight pieces or save it and add it to your muchroom cups it is awsome and very healthy.
I hope it helps. I know it is a struggle I am constently trying to get ways to keep the junk out of the house and the only recourse I have is cook but what else can we cook if we can not eat normal?
