Yams
I'm trying to cook the yams I have heard so many good things about. Not working out for me. I keep over cooking and getting a bad consistancy. Can I get some experty yam preparation tips?

I wrap mine in plastic wrap and micro abut 13 minutes or until soft. They come out perfect!

Or you can bake 'em
You can bake 'em just like a regular potato, if they're the whole sweet potatoes with the orange flesh inside. Add a little butter or butter substitute, and they're wonderful.

Yams
I cut them in quarters, put them in a microwave bowl with just a teaspoon or so of water, cover with plactic wrap and cook them 5 minutes at a time, taking them out and check them, I just keep doing that until they are done.

I lived on yams for a while. Microwave is the simplest way, but the other methods suggested also work. Hmm, I may have to get some yams to eat.

If you like yams.....
I have started to eat butternut squash
Cut in half
brush with smart start margarine
Cover with sugar free maple syrup
Sprinkle with Cinnamon
Bake at 425 for an hour....OMG!!!. Only 82 calories in a cup of butternut squash

OMG, Dyann, that sounds delicious! I LOVE butternut squash! I'll definitely have to try that once my mom's neighbor's garden comes in. She is always overflowing with all kinds of squash! I love it, but hubby doesn't so I never took any. Since hubby and I are eating a lot of things different now, I can do that without feeling guilty! Yum!

I've baked them, and I've also cut them into wedges, with the skin, drizzle with a bit of olive oil, and tossed in a bowl with Old Bay seasoning. This seasoning seems made for sweet potatoes! Yum! Bake on a cookie sheet in the oven at 400, check them after 30 to 45 minutes
