Yams #1
Microwave is the easiest. Scoop out the insides, mash with a little butter, add clove spice and splenda brown sugar...whip them up...awesome. I have also taken this same mixture and used a piping bag (to put on cake icing) and placed on cookie sheet and broiled them for a few mintues....this is good when you have company...for my family I just drop on cookie sheet with spoon and broil.

I like to cut them up and mix them up in a roasting pan with other veggies. For my family and me I do the following:
1-2 full bulbs of garlic - peel each clove and put in pan
canola oil for the pan
rosemary ( I like fresh, but you can use dried)
dill
regular potatoes (cut up)
Yams (cut up into chunks)
carrots
add all this to roasting pan, bake at 400-425 until potatoes are just about soft - when about 10 minutes from being done in oven add:
sliced mushrooms
asperagus
onions
snow peas if you like
Mix up and continue cooking for about 10 minutes.
The garlic goes sweet and adds great flavor to the veggies. I have done this with a variety of veggies and they all come out great!

One other way that I like yams - peel and bake on a sheet. Sprinkle with a little butter or butter spray and add splenda - brown sugar and broil for the last 5 minutes.
