Although you were becoming inactive when I was still a pre-op last year, I have read lots of your posts. Looking forward to hearing when the pannus comes off.

Just checking in...
Things are much the same as they've been the last few months. Surgery is at a standstill for the moment. While I got approved for the skin removal, I didn't get approved for the abdominoplasty, so I have to petition the insurance company and appeal their decision, which could take months. If I'm denied again, I many switch doctors and just have the skin removal anyway.
As far as weight, I hover between 204-210, up and down all the time, usually in relation to salt intake or if I had a bad cracker week. While I would like to be down around 185-190, losing weight at this point is very difficult and SLOW! I'm still pretty vigilant, but I think I've hit a new set point, as I've been at the same weight for quite a while now.
I'm still exercising...going to the gym 1 or 2 times a week, walking or swimming almost every day (or every day that it's sunny!) and I still steer clear of fried/overly fatty foods and anything with more than 7 or 8 grams of added sugar. (With the exception of Golden Grahams, which I totally dump on, but eat anyway...)
I'm having new bloodwork done in August, and will see my surgeon in September for my 2 year follow up. It feels weird saying 2 years have passed...this whole thing is still unbelievable to me!
I still see many of you on Facebook, and while I'm not in here often, I do keep up with a lot of what goes on! I hope all the new folks are doing well and that the board is vibrant and healthy!
I'll try to do a better job of jumping in here more often!

Yep! We are coming up to our 2 year anniversary. I hope it's been a good 2 years for you my friend. You are truly one of the nicest people I've come to know on this forum

My favorite thing right now: FETA CHEESE OMELETS!
I use egg beaters and the store brand crumbled feta. I make them in a flat bottomed pot instead of the skillet (so it's smaller) and I could eat it every meal, if it weren't for the salt in the feta cheese.
My procedure:
Spray the pot with Pam
Get it hot before you put the EB in...then pour in about 1/3 to 1/2 cup.
Let it cook and even bubble until the top starts to put done so it is easy to flip.
Flip it over so the other side can cook and put a couple of ounces of Feta on one half.
After a minute or so, flip the naked side over onto the feta side, turn off the heat, and stick a piece of foil over top of pot.
Wait 2-3 minutes for the feta to melt.
Then, eat it.
It's even better when you add a little spinach to the eggs or use the Southwest flavor of eggbeaters with the peppers already in there!
